I wonder if that would work just the same as regular sugar? If you don't mind the flavored kind, I'd suggest vanilla yogurt, and just skip the additional vanilla extract. I think it gives the oats a creamier texture. If you're really not a fan of yogurt, using more milk would be just fine. I'd say about 3/4 - 1 cup of milk instead.
