Visions of Sugar Plums

Merry Christmas in July!! Break out the cocoa and candy canes!...Ok not really, unless you celebrate this unofficial holiday. When I worked at a bakery in high school, I remember people ordering cakes for the holiday as well as one year Christmas music playing on the radio. I'm sure all the department store shelves are lined with Christmas decor since it's already July! You need at least 6 months to purchase countless ornaments and wrapping paper that you don't need! ; )

Whether celebrating or not, some plum pancakes are sure to please! I also made a maple yogurt dipping sauce instead of pure maple syrup to cut back on the sugar. An easy recipe to mix up the pancake routine. Perfect for a saturday morning breakfast.

Plum Pancakes with Maple Yogurt Dipping Sauce
serves 1 ~ about 4 pancakes


1/2 pancake mix (I uses Bisquick Heart Smart)
3/4 cup water
1 tsp vanila
1 tsp ground cinnamon
pinch nutmeg
1/2 tsp ground ginger
1 medium plum, sliced


Dipping sauce:
2 T plain non-fat yogurt
1 T maple syrup


Simply combine the pancake mix, water, vanilla, and spices to form the batter. Normally, pancake mixes call for milk and eggs, but I found just water works fine for me. Also, I was out of milk!

Heat a skillet to medium-low, and spray with cooking spray. Use 1/4 cup scoop to portion out pancake batter, cooking 2-3 minutes per side. While cooking the first side, add slices of plum before flipping.


Mix together the yogurt and maple syrup and pour over cooked pancakes, or serve on the side.

  1. Do you recall watching Christmas cartoons in a pool in July. Having cold chocolate ? Yep that is the true Christmas in July celebration!
