Greetings! Sooo if you read my last post, I was going to update on how my presentation went on Tuesday. Well to every negative there is a positive! My presentation got cancelled since they changed the date of the program, so instead I got to be on TV.

...Wait, WHAT?! Yes, I had the opportunity to be featured on the local news station WFSR with my preceptor for an interview! I'd say that's a step up from a presentation!

Surprisingly, I wasn't that nervous, my preceptor Mim was good about giving me advice to just local at the interviewer and we rehearsed what we were going to say on the way there. Never thought I would be doing anything like this anytime soon, but thankful for this awesome opportunity. Mim also said since I enjoyed it so much, she would definetely be calling me in January when the Health Department does their healthy lifestyle campaign of Scale Back Alabama! Watch out Food Network, Sinfully Nutritious may be hitting your airwaves before you know it!

Okay, well if that wasn't enough to post about I did make my own version of Chia pudding, which I keep seeing in the blogging world. It involves soaking chia seeds, which make a sort of jell, much like tapioca. It was something different, and quite a filling breakfast!




Protein Chia Breakfast Pudding

3 T Chia seeds
1/3 cup Oats
1 cup soy milk (or milk of your choosing)
1 tsp cinnamon
1 scoop vanilla protein powder (optional)
1 T Granola (optional)

What I did was combined everything except the granola in a bowl, and refrigerated overnight. The next morning I gave it a good stir, added a splash more milk, and topped with granola and a sprinkle more of cinnamon.

It was a nice change to my usual oats for breakfast, and very nutritious I have to say. If your not partial to jelly and crunchy at the same time, I may passe' this recipe, but if you're looking for something different, I'd say give it a try!

In another news (already practicing for my next news spot!) I will be NH bound about this time tomorrow for the lovely wedding (aka party) of the year for my best blonde sidekick Katie and her soon to be hubby Alex! As the MOH i found it semi-absolutely necessary to attend. Looking forward to seeing everyone for the holiday weekend, and my only trip home before Christmas! I would go more in to depth on the post, but am rather tired this evening. My apologies for not indulging more of my personal life for your perusal. C'est la vie!
